  1. Peel and dice the sweet potato into 1 cm cubes. Dice the onion and bell pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add the sweet potato cubes and cook for 8 minutes, stirring occasionally, until starting to soften.
  3. Add the onion and bell pepper and cook for 3 more minutes until softened.
  4. Push the vegetables to the sides of the pan. Add the ground turkey to the centre and cook for 6–8 minutes, breaking it up with a spatula, until browned through.
  5. Stir everything together, season with salt, pepper, and smoked paprika to taste, and serve hot.
