  1. Peel and slice the potatoes thinly. Slice the onion.
  2. Confit the potatoes and onion gently in olive oil for 15 minutes until soft (not browned). Drain and salt.
  3. Beat the eggs in a bowl, fold in the warm potatoes and onion, rest 5 minutes.
  4. Heat a splash of oil in a non-stick pan, pour the mixture, cook 4 minutes until the base sets, flip with a plate, cook 3 more minutes. Centre should be slightly jammy.
