- Potato200 g
- Egg150 g
- Onion50 g
- Olive oil15 g
Instructions
- Peel and slice the potatoes thinly. Slice the onion.
- Confit the potatoes and onion gently in olive oil for 15 minutes until soft (not browned). Drain and salt.
- Beat the eggs in a bowl, fold in the warm potatoes and onion, rest 5 minutes.
- Heat a splash of oil in a non-stick pan, pour the mixture, cook 4 minutes until the base sets, flip with a plate, cook 3 more minutes. Centre should be slightly jammy.
