  1. Pound pork chop between plastic wrap to 0.5cm thick.
  2. Set up three plates: flour, beaten egg, bread crumbs.
  3. Coat pork in flour, then egg, then bread crumbs, pressing firmly.
  4. Heat olive oil in pan, fry schnitzel 3-4 minutes per side until golden.
  5. Warm cooked potatoes in pan or microwave.
  6. Serve schnitzel with potatoes and lemon wedges on the side.
