  2. Rub pork loin with half the olive oil, salt, and pepper.
  3. Toss sweet potato and green beans with remaining olive oil and garlic; roast at 200°C for 15-20 mins.
  4. Sear pork loin in a hot pan for 2-3 minutes per side, then transfer to the oven with vegetables.
  5. Continue roasting for 10-15 minutes until pork reaches 63°C; let pork rest for 5 minutes before slicing.
