Ingredients
- Long-grain rice (cooked)220 g
- Lamb (leg)120 g
- Carrot80 g
- Onion40 g
- Garlic8 g
- Cumin (ground)2 g
- Olive oil15 g
Instructions
- Heat olive oil in a heavy pot and brown the cubed lamb on all sides.
- Add sliced onion and julienned carrot, sauté until softened and lightly caramelized.
- Stir in cumin, salt and whole garlic cloves, then pour in enough water to cover.
- Simmer covered for 40 minutes until lamb is tender and broth is rich.
- Add the cooked rice on top, do not stir, cover and steam 10 minutes off the heat.
- Gently mix from the bottom to combine meat, vegetables and rice, serve hot.
