  1. Boil potatoes and carrots in their skins until tender (~20 min). Hard-boil eggs 10 minutes. Cool completely.
  2. Dice everything into 7-8 mm cubes — same size for elegance: potato, carrot, eggs, chicken, pickles.
  3. Combine with the drained peas and mayonnaise. Salt and pepper to taste. Chill at least 1 hour before serving.
