  1. Core the cabbage, drop into boiling salted water 10 minutes — leaves should peel away easily. Trim the thick rib of each leaf flat.
  2. Mix raw ground beef with parboiled rice, finely chopped sautéed onion and carrot, salt and pepper.
  3. Place a spoon of filling on the rib end of each leaf, fold sides in and roll tightly. Pack the rolls seam-side down in a wide pot.
  4. Cover with tomato-broth (water + tomato paste + sour cream + salt), add bay leaf. Simmer covered 1.5 hours on low heat. Serve with extra sour cream.
