Instructions
- Season the chicken breast with salt, pepper, and a little olive oil. Grill or pan-sear over high heat for 6–7 minutes per side until cooked through.
- Let the chicken rest for 5 minutes, then slice thinly.
- Halve the cherry tomatoes and slice the cucumber into half-moons.
- Place cooked quinoa in a bowl. Arrange the chicken slices and vegetables on top.
