  1. Dice raw fish into 1cm cubes, place in glass bowl.
  2. Squeeze lime juice over fish, ensure pieces are covered.
  3. Refrigerate 15 minutes until fish turns opaque white.
  4. Finely dice red onion, tomato, jalapeño and chop cilantro.
  5. Drain excess lime juice, mix fish with vegetables and salt.
  6. Serve cold immediately, ideally with tortilla chips.
