Ingredients
- Dried black beans80 g
- Smoked pork ribs80 g
- Linguiça60 g
- Pork shoulder (cubed)80 g
- Bacon (smoked)30 g
- Onion80 g
- Garlic8 g
- Bay leaf0.5 g
Instructions
- Soak black beans in cold water overnight. Drain.
- Render bacon in a large pot. Brown pork shoulder, then linguiça, then ribs. Remove and set aside.
- In the rendered fat, sweat chopped onion and garlic 5 minutes. Return all meat. Add beans, bay leaf and 1.5 L water. Simmer covered 2 hours, stirring occasionally.
- Mash a ladle of beans against the side of the pot and stir back in to thicken. Adjust salt. Serve over rice with farinha de mandioca, kale and orange slices.
