  1. Soak black beans in cold water overnight. Drain.
  2. Render bacon in a large pot. Brown pork shoulder, then linguiça, then ribs. Remove and set aside.
  3. In the rendered fat, sweat chopped onion and garlic 5 minutes. Return all meat. Add beans, bay leaf and 1.5 L water. Simmer covered 2 hours, stirring occasionally.
  4. Mash a ladle of beans against the side of the pot and stir back in to thicken. Adjust salt. Serve over rice with farinha de mandioca, kale and orange slices.
