Ingredients
- Chicken thigh180 g
- Red wine (for cooking)120 g
- Bacon lardons30 g
- White mushroom80 g
- Onion60 g
- Carrot60 g
- Butter10 g
Instructions
- Render bacon lardons in a Dutch oven until crisp, set aside.
- Brown chicken thighs in bacon fat on all sides, then remove.
- Sauté diced onion and carrot in butter until softened.
- Return chicken and bacon to pot, pour red wine over.
- Cover and simmer gently for 45 minutes until chicken is tender.
- Add sliced mushrooms in the last 10 minutes of cooking.
- Adjust seasoning and serve hot with crusty bread.
