  1. Render bacon lardons in a Dutch oven until crisp, set aside.
  2. Brown chicken thighs in bacon fat on all sides, then remove.
  3. Sauté diced onion and carrot in butter until softened.
  4. Return chicken and bacon to pot, pour red wine over.
  5. Cover and simmer gently for 45 minutes until chicken is tender.
  6. Add sliced mushrooms in the last 10 minutes of cooking.
  7. Adjust seasoning and serve hot with crusty bread.
