  1. Chop the dark chocolate finely and melt it in a heatproof bowl over simmering water.
  2. Separate the egg, set the yolk aside and whisk the white to soft peaks.
  3. Whisk the yolk with sugar until pale, then stir into the melted chocolate.
  4. Whip the heavy cream separately until it holds soft peaks.
  5. Fold the whipped cream into the chocolate mixture gently to keep it airy.
  6. Fold in the whipped egg white in two additions until just combined.
  7. Spoon into a glass and chill at least 3 hours before serving.
