  1. Simmer chicken breast in salted water 15 min, slice thinly.
  2. Soft-boil egg 7 min, peel and halve.
  3. Whisk miso and soy sauce into 400 ml hot chicken broth.
  4. Sauté sliced mushrooms in a dry pan until golden.
  5. Place noodles in bowl, pour broth over.
  6. Top with chicken, egg, mushrooms and scallions.
