  1. Cut chicken into 3cm cubes, place in bowl.
  2. Mix olive oil, lemon juice, minced garlic and parsley; marinate chicken 15 minutes.
  3. Cut red onion and bell pepper into chunks.
  4. Thread chicken, onion and pepper alternately onto skewers.
  5. Grill skewers 10-12 minutes, turning, until chicken is cooked through.
