Instructions

  1. Cook chicken breast in simmering water 15 minutes, then shred with forks.
  2. Saute diced onion and jalapeño in pan 3 minutes until soft.
  3. Mix shredded chicken with onion, jalapeño and 2 tbsp enchilada sauce.
  4. Fill 2 tortillas with chicken mixture, roll up and place seam-down in baking dish.
  5. Pour remaining sauce over, top with cheddar, bake at 200C for 15 minutes.
