Ingredients
- Wheat tortilla80 g
- Chicken breast150 g
- Enchilada sauce120 g
- Cheddar cheese40 g
- Onion40 g
- Jalapeño15 g
Instructions
- Cook chicken breast in simmering water 15 minutes, then shred with forks.
- Saute diced onion and jalapeño in pan 3 minutes until soft.
- Mix shredded chicken with onion, jalapeño and 2 tbsp enchilada sauce.
- Fill 2 tortillas with chicken mixture, roll up and place seam-down in baking dish.
- Pour remaining sauce over, top with cheddar, bake at 200C for 15 minutes.
