  1. Chop onion, garlic, tomato, and chicken thigh into bite-sized pieces.
  2. Heat coconut oil in a pan, then sauté chopped onion and garlic until softened.
  3. Add chicken pieces to the pan and cook until lightly browned on all sides.
  4. Stir in chopped tomato and 1-2 tablespoons of curry powder, cook for 2-3 minutes until fragrant.
  5. Add a splash of water, bring to a simmer, and cook for 10-15 minutes until chicken is tender and sauce thickens.
  6. Season with salt and pepper to taste.
  7. Serve the chicken curry hot with the cooked white rice.
