  1. Pour the coconut milk into a jar and whisk in the honey until dissolved.
  2. Stir in the chia seeds until evenly distributed with no clumps.
  3. Let sit 5 minutes, stir again to break up any settled seeds.
  4. Cover and refrigerate at least 4 hours or overnight to gel fully.
  5. Hull and halve the strawberries, rinse the blueberries.
  6. Top the pudding with the fresh berries just before serving.
