  1. Thinly slice onion and jalapeño.
  2. Place tortilla in dry pan over medium heat.
  3. Sprinkle cheddar, mozzarella, onion and jalapeño over half of tortilla.
  4. Fold tortilla in half, press gently with spatula.
  5. Cook 2-3 minutes per side until golden and cheese melts.
  6. Cut into wedges and serve hot.
