Instructions
- Chop onion, carrot, beet, cabbage, and garlic.
- Heat olive oil, sauté onion, carrot, beet for 5-7 mins. Add tomato sauce and garlic.
- Add cabbage and water/broth to cover vegetables. Bring to a boil.
- Reduce heat, cover, and simmer for 15-20 minutes until cabbage is tender.
- Add cooked potato and continue to simmer for another 5-10 minutes.
