  2. Bring the water to a rolling boil over medium-high heat.
  3. Reduce heat slightly and simmer for 9 minutes for hard-boiled yolks.
  4. Drain and transfer the eggs to a bowl of ice water for 2 minutes.
  5. Peel the eggs under running water, then halve them lengthwise.
  6. Season with salt and freshly ground black pepper to taste.
