  1. Cut beef sirloin into thin strips and pat dry with paper towels.
  2. Melt butter and quickly sear the beef strips over high heat for 1 minute, then remove.
  3. In the same pan sauté sliced onion and mushrooms until golden and moisture evaporates.
  4. Stir in Dijon mustard and sour cream, then add a splash of water to make a sauce.
  5. Return beef to the sauce and warm through for 2 minutes without boiling hard.
  6. Serve the stroganoff over hot egg noodles, sprinkled with chopped parsley.
