Ingredients
- Salt cod (soaked, shredded)150 g
- Matchstick potatoes (fried)120 g
- Egg100 g
- Onion100 g
- Olive oil20 g
- Black olives20 g
- Fresh parsley5 g
Instructions
- In a wide pan, soften finely sliced onion in olive oil over medium heat for 10 minutes until sweet and pale gold.
- Add the shredded bacalhau and toss 4 minutes to warm through and absorb the oil.
- Beat eggs with black pepper. Stir in the fried matchstick potatoes to coat with the cod mix.
- Pour in the eggs and stir gently with a wooden spoon over low heat until just creamy — never let them set hard. Plate immediately with olives and chopped parsley.
