- Eggplant250 g
- Tahini25 g
- Garlic5 g
- Lemon juice15 g
- Olive oil12 g
- Parsley (fresh)5 g
Instructions
- Pierce eggplant with fork, roast whole at 220C for 30 minutes until soft.
- Let eggplant cool, then scoop out flesh and discard skin.
- Blend flesh with tahini, minced garlic, lemon juice and salt until smooth.
- Transfer to bowl, drizzle olive oil over the top.
- Garnish with chopped parsley and serve with pita.
