  1. Pierce eggplant with fork, roast whole at 220C for 30 minutes until soft.
  2. Let eggplant cool, then scoop out flesh and discard skin.
  3. Blend flesh with tahini, minced garlic, lemon juice and salt until smooth.
  4. Transfer to bowl, drizzle olive oil over the top.
  5. Garnish with chopped parsley and serve with pita.
